abstract

  • The objective was to conduct a student-developed educational program focused on improving nutrition and lifestyle practices with emphasis on calcium intake in African Americans. Eightytwo adults were initially recruited in a student-led pilot intervention over the course of 8 weeks. Anthropometrics, blood pressure, and dietary records for calcium, fruit, and vegetable intake were administered. Surveys about knowledge of the role of calcium in diseases and lactose intolerance were also conducted. Results showed improvement in calcium, fruit, and vegetable intake and an increase in lactose intolerance knowledge, whereas weight and blood pressure remained unchanged. A student-developed intervention on nutrition and lifestyle practices can be effective with this population and beneficial to students' experiences.
